I’ve been following the girls over on A Beautiful Mess for quite a while now and love everything about their blog, especially their beautiful photos. It occurred to me the other day, though, that I had yet to actually recreate any craft or recipe that they have shared. Well, “what is up with that?”, I asked myself. The other day I was thinking about what to cook for dinner, and Emma solved all of my problems by posting a super simple and yummy looking recipe, a mushroom pasta. I went to the store, grabbed a few of the ingredients I didn’t have, and easily put together this dish. I left out the red wine because I don’t drink red wine and didn’t want to purchase a whole bottle just to use a small percentage of it. So instead I just poured more vegetable stock in. I used feta instead of goat cheese, and the garnish added that little something extra. I also made this garlic bread to go with it, and the meal was so good! Ask me a year ago if I would have eaten a dish that was half mushrooms…I’ve grown a lot. ๐
P.S. It’s also really fun to chop mushrooms.
