We all know I bake a fair amount. But since we’ve been in Los Angeles, I’ve found myself only going to the easy basics: chocolate chip cookies and banana bread. And we all know I bake those a lot. So one of my bucket list items for this summer is to bake a cake (from scratch). My last attempt looked like this, so I needed to prove my worth with this one. My family was planning a Father’s Day dinner, so I volunteered to bring the dessert and thought it was the perfect opportunity to try a new cake recipe (yeah, I like to live on the edge). I found this yellow cake with vanilla frosting recipe through Emily’s blog (cake recipe here and frosting recipe here). As always, cake baking is a long process and a bit messy, but all turned out well! I was pleased to find out that everyone loved the cake…so much in fact that there was none leftover.
I attempted a light green/mint color for the frosting, but it’s difficult to tell in the photos. You can really see the true color of the frosting in the photo above (that I took outside). Also, this frosting uses regular sugar, so (in my opinion) it’s a wonderful alternative to the thick and overly sweet powdered sugar frostings. Please excuse my less-than-perfect-cake-frosting skills.
