Lately I’ve been coming across some yummy vegetarian options at restaurants (that don’t involve pasta or a lot of cheese). The weekend before last we had Chipotle’s veggie burrito bowls…twice. They are so good, and strangely, I’d never even had a burrito bowl there. I decided the recipe seemed easy enough to recreate at home.
Veggie Burrito Bowl
*sauteed green bell pepper
*pico de gallo (I used this recipe)
Easy, yummy, and healthy! 🙂 I used canned corn and black beans (both drained), as well as “instant” brown rice.
